GREAT GRANNIE'S PLUM CAKE - Zara Devlin, actor (Sing Street)

"This recipe came from my great-great-grandmother, and my grandmother taught me how to make it. No one knows why it’s called ‘Plum Cake’, as there are no plums in it and it’s not a cake - it’s bread! It is one of the most beautiful breads I’ve ever tasted.It’s beautiful in the colder months with Irish butter and jam and a cup of tea."

Ingredients
  

  • 40 oz Self-Rising Flour
  • 12 oz Castor Sugar
  • 4 oz Raisins
  • 4 oz Mixed Peel
  • 1 oz Cinnamon
  • 2 tsp Baking Powder
  • 12 oz Butter (slightly melted)
  • 3/4 pint Milk

Instructions
 

  • Preheat oven to 320 F.
  • Prepare 9" cake tin by lining base and sides with greaseproof paper. Leave 2-inch gap between base and sides.
  • Combine all dry ingredients into large mixing bowl.
  • Add butter and milk, and mix together until a dough forms. Do not knead!
  • Scrape the dough into prepared cake tin, and place a sheet of greaseproof paper lightly on top of dough.
  • Put on the middle rack of oven and bake for 30 minutes.
  • Turn heat down to 300 F and bake for another 90 minutes.
